The chart on this page addresses the need for safe storage of leftovers. Specifically, it demonstrates the "Danger Zone" when food reaches temperatures that allow for spoilage. One local public health agency has allowed the use of this worksheet as an ADA accommodation for taking the test for getting a food handler's license.
